Water Grill Bellevue on KING 5’s New Day Northwest

Bellevue's go-to restaurant for first-of-season seafood and live oysters, Water Grill, showed off their expertise on the grill instead of the water on KING 5’s New Day Northwest this week. Head Chef Kaelon Sparks showed Guests how to achieve the perfect sear using Snake River Farms’ Wagyu Gold Filet Mignon as the star of the segment.

In collaboration with Idaho’s Snake River Farms, Water Grill is expanding their meat program to include “Gold Label” cuts of filet mignon and ribeye. As Chef Kaelon explained, “Gold signifies the Beef Marbling Score, or BMS. For a Prime steak, you’d be at a six out of twelve range, but with the Gold it’s all a nine-plus.”

Using a ripping-hot cast-iron pan, Chef Kaelon lets the heavy marbling do the work, releasing rich beef flavor and the fats that help create the golden-brown sear we all look for in a perfectly cooked steak. He also shares pro tips for getting that restaurant-quality sear at home.

The Abbey Road Craft Cocktail

As the summer sun casts its warm glow, there’s nothing more refreshing than enjoying a delightful cocktail that embodies the vibrant spirit of the season. The Abbey Road is a playful twist on the classic gimlet, returning to our menu every August to celebrate the fleeting beauty of champagne grapes, also known as Corinth grapes. These special little fruits are only available for a limited time each summer, making the Abbey Road a must try.

To craft the Abbey Road, begin by muddling a handful of champagne grapes at the bottom of your glass. This step releases the grapes’ delightful flavor and vivid color, creating a stunning base for your cocktail. Combine gin, lime syrup and fresh lime in the glass. Fill the glass halfway with crushed ice and swizzle the ingredients to blend the flavors. Add more crushed ice, creating a “cone effect”. For the finishing touch, top with lime confit and a small bundle of champagne grapes, creating an eye-catching presentation that will impress your Guests!
